'Grapes from Faure. Destemmed to avoid the reduction in acidity that whole-bunch fermentation tends to bring about. Refined notes of plum and cherry on the nose. Light and fresh on the palate with a lovely sappy quality – understated yet vivid and precise. Tannins are fine, the finish long and saline. 'Uniquely to our usual red winemaking style, we destem our Cinsaut before fermentation. We find that Cinsaut has a lower acidity than Pinot Noir and Syrah, so we like to capture the little acidity that it has (whole bunch ferments tend to reduce acidity). Gentle pumpovers or punch downs are performed 1-2 times a day throughout fermentation, and the wine is pressed to 500L barrels for maturation. We like to capture the fresher, brighter characters of Cinsaut, and thus bottle this wine earlier that our other red wines.' – Jeanine and Mick Craven, Winemakers

Producer information As Stellenbosch revolutionaries, Mick and Jeanine Craven’s constant experimentation and their willingness to fight for great little parcels, have made them the poster couple for bringing whole-bunch, skin contact, early picking and all things geeky to Stellenbosch. These Young Gunners are the Stellenbosch champions of light, yet complex wines. Producing single-vineyard wines only, these 2 winemakers know their vineyards like the back of their hands. ‘Craven is one of the most interesting wine projects in South Africa. It's part of the rediscovery of the best vineyard sites in Stellenbosch that's currently underway, with a whole group of young guns looking to find the gems and make interesting wines from them,’ says Jamie Goode.
