Cabernet Sauvignon is the leading varietal on Waterford Estate, as selected by the terroir found on the slopes of the Helderberg Mountain. The well drained soils are very well suited to the growth of this varietal, driven by deep sandstone parent rocks and layered gravel with sporadic deposits of schist. The underlying clay in these soils help to buffer against the heat experienced in Stellenbosch during the summer months.

The Helderberg Mountain region is known to produce Cabernet Sauvignon characterised by earthy aromatics, well-textured tannins and fresh finishes. These are some of the factors that contribute towards the Helderberg area being particularly well known for longevity in their wines.

'Mark Le Roux describes this Cabernet Sauvignon-based red (there’s a little Merlot, Petit Verdot and Cabernet Franc in the mix) as Waterford’s “flagship wine”. It’s certainly a brilliant red, deliberately made in a fresher style. Focused and refined, with subtle graphite and green herb notes and a core of cassis leaf fruit. About Waterford:
The Waterford Estate is located in Blaauwklippen Valley in Stellenbosch. Of their 120-hectares, only half is plated with vines to allow for the preservation of the natural fauna and flora found on the estate. Waterford is owned by the Ord Family with Kevin Arnold as the Cellar Master and Managing Director. Decades of experience at Delheim and Rust en Vrede led Kevin to the prime Waterford Estate on the slopes of the Helderberg, where after much research, he planted a basket of Mediterranean varieties.
